{Spinach and Chicken Salad with Ginger Dressing}

This is a delicious salad! All of the flavors blend really good together.















FOR THE DRESSING:

1/4 cup of olive oil
1 tsp dark sesame oil
2 tbsp seasoned rice vinegar
1 tsp soy sauce
1 tsp fresh ginger, finely minced
1 clove of garlic, minced
Juice of 1 orange
1 tsp honey
Pinch of salt

Whisk together until well combined.

FOR THE SALAD:

1-2 Chicken breasts diced
Baby spinach leaves
Mandarin oranges
Dried cranberries
Toasted almonds
Wonton strips or dried chow mein noodles

Toss all in a bowl and pour the dressing over top. Serve.
